MAASH

MAASH is a Belgian foodtech startup that specializes in the production of fungi protein (mycoproteins). In July 2024, the company established operations in Eastern France, taking over the Metex Noovista site on the Chemesis industrial platform in Saint-Avold (Moselle). Utilizing advanced fermentation technology, MAASH produces high-quality mycoprotein—a nutritious and sustainable alternative to meat. This innovative ingredient is designed to replace the meat fraction in a variety of finished products, including burger patties and chicken nuggets, offering a healthier and more environmentally friendly option for consumers.

Activities developed on the Chemesis platform

Founded in 2021 in Brussels, MAASH entered the foodtech and the alternative protein market with fungal fermentation, focusing specifically on mycoproteins. To industrialize its processes and meet the growing demand across the European market, MAASH seized the opportunity to take over the fermentation plant in Carling (Moselle), originally commissioned by METEX NØØVISTA in 2021 and placed in receivership in March 2024. Approximately ten jobs have been retained, with the potential to create 70 additional jobs in the long term.

MAASH specializes in cultivating mycelium, the root structure of mushrooms, which is rich in fiber and protein. Through fermentation, this mycelium is exponentially grown to produce a dense, nutritious, and sustainable protein ingredient with a texture similar to chicken meat. This ingredient will be supplied to the food industry for use in finished products such as burgers, sausages, and nuggets.

The Belgian company plans to start operations in 2026. In the first phase, the MAASH intends to adapt the current facilities to produce 2,000 tons per year, before reaching a production capacity of 10,000 tons per year. An extension, involving the opening of 2 additional production lines of 30,000 tons each on the available land, is already being studied to reach a capacity of 70,000 tons each year.
